Chile Relleno Bake


Ingredients

1 pound ground beef
½ cup chopped onion
2 cloves garlic chopped
½ tsp. salt
½ tsp. chile powder
Dash pepper

2 4-ounce cans green ortega chilies - drained

6 ounces sharp natural cheddar cheese, shredded (1½ cups)
1½ cups milk
4 beaten eggs
¼ cup all-purpose flour
Several dashes bottled hot pepper sauce


Directions

Brown beef. Combine onion, garlic (optional), salt, pepper and chile powder (if desired) with meat. Drain off fat. Halve chilies crosswise; remove seeds. Place half the chilies in 10x6x1½ inch baking dish; sprinkle with cheese; top with meat mixture. Arrange remaining chiles over meat. Combine remaining ingredients; beat till smooth. Pour over chiles.

Bake in moderate oven (350°) for 45 to 50 minutes, till knife inserted comes out clean. Cool 5 minutes before serving. Makes 6 servings.
