Ice Box Cookies


Ingredients

1 cup shortening
3 eggs (beaten)
2 cups brown sugar
1 tsp. vanilla
3 cups flour
1 tsp. baking soda
1/4 tsp. salt
1/2 cup nuts (Raisins, dates, and candied friut may also be used)


Directions

Cream together brown sugar and shortning. Add beaten eggs and vanilla. Mix well then add remaining ingredients. After all ingredients have been thoroughly combined, turn out cookie dough onto clean surface and form by hand into rectangular "loafs" about 2 1/2 inches by 1 1/2 inches and about one foot long. Chill overnight in refrigerator.

When ready to bake, remove chilled dough from refrigerator and slice into individual cookies and place on cookie sheet. Bake about 10 minutes at 350°.
