Bring the milk to a boil with the bay leaf and onion. Remove from heat and let stand 10 minutes.
In a heavy-based saucepan melt the butter, add the flour and cook together over low heat, stirring for one minute to make a roux.
Remove the roux from the heat and add the milk mixture, stirring vigorously. Cook about 1 minute. Add the chicken stock and the grated ginger; bring to a boil and simmer 10 minutes, stirring often.
Remove the pan from heat, strain and add the stilton, stirring until it is melted. Add pepper and vanilla.
Notes:
1. The amount of vanilla depends on the flavor of the stilton - taste test.
2. Serve with warm crusty French Bread.
